Healthy Pancakes

  • 1 cup quick-cooking oats
  • 2 eggs
  • ¾ cup almond milk (or cow's milk)
  • ¼ cup berries of your choice
  • Pinch of cinnamon
  • 1 tablespoon butter
  • Maple syrup or honey, for topping


  1. In a large mixing bowl, combine the oats, eggs, milk, berries and cinnamon. Stir well and let stand for 2 minutes.
  2. In a large sauté pan or griddle, warm the butter over medium heat. Scoop 2 tablespoons of batter into the pan to make each pancake and cook 2 minutes, or until bubbly. Flip and cook 2 minutes other side. Serve with syrup or honey if you wish.
