Ethan's Banana Bread

INGREDIENTS:

  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 cups flour
  • ½ tsp cinnamon
  • ½ cup apple sauce
  • ¾ cup sugar
  • 2 eggs
  • 4 mashed bananas
  • ¾ cup semi-sweet chocolate chips
  • ½ cup fresh or frozen cranberries

STEPS:

  1. Preheat oven to 325° F.
  2. Combine flour, baking soda, baking powder and cinnamon in a small bowl and set aside.
  3. In another bowl, cream apple sauce, sugar and eggs.
  4. Slowly add flour mixture and mix well.
  5. Add mashed bananas and beat well.
  6. Stir in chocolate chips and cranberries.
  7. Bake in two small loaf pans for approximately one hour or when toothpick inserted in centre comes out clean.

DESCRIPTION:

We have been using this old family recipe for banana for a few generations now, but Ethan I made some changes. Some of the changes are to make the banana bread more healthy like using apple sauce instead of margarine and reducing the sugar. Some changes we made because we thought it would be even more yummy like adding chocolate chips, cinnamon and cranberries.
