1 fresh locally caught salmon 10-12 medium sized boiled potatoes Salt, pepper & parsley to taste Olive oil Cut and boil salmon for 10 minutes. Let cool and de-bone. Boil potatoes until tender. Mash potatoes and add to salmon. Add salt, pepper and parsley. Shape into cakes. Fry for 6 minutes on each side in olive oil. We do not have a picture because we will not have fresh salmon until August when in season. Besides frying it over an open fire during a boil up, it's the best way to cook it. Teaching Rachel our aboriginal heritage and traditions is one my proudest moments of being a parent. Also note that Atlantic salmon is the best. We'll bring some to Ottawa with us!
